These sweet, caffeinated gems are the perfect dessert this holiday season! Though it takes some time to roll each truffle and dip in chocolate, the effort is well worth it. Enjoy them as an indulgent treat or a delightful afternoon pick-me-up amidst the holiday hustle and bustle.
Toppings (optional): Summer Berry, Cranapple Cinnamon, or Baked Apple Sweet Dip Mix
- To food processor, add oats. Blend to the consistency of flour. Remove from food processor and set aside.
- To food processor (don't wash), add dates, dessert dip mix, water, coconut oil, and a pinch of salt. Blend until smooth.
- Gradually add oat flour, 1⁄4 cup at a time, until the mixture comes together, scraping down sides as needed. It will be sticky.
- Using your hands, roll mixture into 16 balls. The mixture will be sticky, so moisten your hands first to make the process easier. Place on 1⁄4 Sheet Pan lined with 1⁄4 Sheet Pan Liner. Freeze 15 min.
- Meanwhile, place chocolate chips in large, microwavable bowl. Microwave on high uncovered, stirring every 30 sec, until mostly melted, about 2 min. Stir until completely melted.
- Using a fork, dip truffles, one at a time, into chocolate, tapping fork on edge of bowl to remove excess. Place back on pan. If desired, sprinkle with toppings. If melted chocolate starts to harden during this process, reheat in microwave.
- Refrigerate until chocolate has set, about 5–10 min.
These truffles can be sticky to work with, so be sure to wet your hands before rolling them into balls to make it easier and to avoid a sticky mess!
